Peach pancakes

I had to make these twice just to be sure but they are indeed the best pancakes I have ever had. Yes, not just made but had. I think about them far too often then I should and therefore have decided that they will be the first recipe posted on my blog.

Peach Pancakes (makes about 10) (If you double it, keep the 1 egg and make it 3 T butter)

1 cup buttermilk
1 cup flour
1 T sugar
1 t baking powder
1/4 t baking soda
1/4 t salt
1/4 - 1/2 t freshly ground nutmeg
1 egg
2 T unsalted butter melted and slightly cooled
1 large ripe (but cutable) peach

Whisk dry ingredients
Whisk egg & butter into buttermilk
Make a well in dry ingredients
Pour in milk mixture & whisk gently ( leave a few lumps)

Cook in a skillet or griddle (I didn't even use butter)
Pour about 1/4 cup batter & sprinkle cutup peaches all over
cook about 1-3 minutes until large bubbles appear, flip & then cook until golden
Cover with butter and real maple syrup
They'll keep for a little while on a cooling rack in a 250 oven

Sorry there are no pictures of the finished product as they were eaten within 5 minutes of us sitting down to breakfast.

  1. These sound delicious, especially since I just used up a flat of peaches on other delights including my first batch of homemade baby food. I might have to buy some more. Also, we have the same highchair as you!

  2. Ooh! Try the peach mango combo (2 mangos & 2 peaches) cooked with a little water. It made 4 ice cube trays and Ian loves it. Is Bea eating already? Wow that went fast.

  3. No, not yet. She's on rice cereal right now. Waiting a couple more weeks until she's 6 months to add fruits/veg, but I thought I'd get started early while all the produce is in season and on sale!
